Endometriosis is a common medical condition where the tissue lining the uterus is found outside of the uterus, typically affecting other organs in the pelvis. The condition can lead to serious health problems, primarily pain and infertility. A major symptom of endometriosis is pain, mostly in the lower abdomen, lower back, and pelvic area.
Do you like butternut squash? I make an anti-inflammatory butternut squash soup, it honestly (I know I am biased) is really good.
it has:
butternut squash
apple
olive oil
onion
gluten free organic chicken broth (you can sub with gluten free veggie broth)
nutmeg
pepper
fresh grated ginger (which in my opinion is the best and most important part!)
Everything gets blended (I use and emersion blender) and to add protein I either add pea protein directly to the soup or I use a plain Greek yogurt.
You can either cook it on the stove or slow cooker. Let me know if you want all of the instructions, I would be more than happy to send them to you.
As for my elimination besides being allergic to seafood I try to avoid gluten, It really does me in. I can only tolerate it in really small doses. I do have organic hormone free grass fed milk, cheese and meats and tonz of fruits and veggies. I don't really do eggs, regardless if they are organic or not I feel sick after eating them, but I seem to do o.k if they are mixed in with something ie cookies go figure.
I really like the rice, beans and veggie idea as well as the soup. I like to eat light before bed, if I eat to much or to heavy it aggravates my heartburn. :(
I use:
1 medium onion, chopped
2 med. apples cored and diced
2 packs of the already cut butternut squash (no idea how many cups that is, I just buy two packs)
32oz of pacific organic free range chicken broth (it is gluten free) but you can use whatever brand you want (obviously)
freshly grated ginger (use however much you like, I use about a tablespoon or maybe more)
1/2 tsp of pepper
1/2 tsp of nutmeg
1tbsp olive oil
Instructions:
If you plan on doing it in the slow cooker, just throw everything in (you can even minus the olive oil if you want) and let it cook for about 4-6 hours.
Stove top:
Saute onions in the olive oil on med/high heat until translucent.
Then add all other ingredients and bring to a boil. Then turn down heat and let simmer for 30 min.
For both cooking techniques you want to puree the soup, you can do this in a blender (just be careful not to burn yourself) or I use an emersion blender, which makes it much easier.
Like I mentioned before, for added protein (to make it a meal) I add pea protein (because it has no taste and works well with most things) or I use plan Greek yogurt, it makes the soup cream and beyond awesome!

A few garlic cloves
1 large onion
I cup uncooked white rice
I cup water
I can black beans, rinsed
1 can diced tomatoes
1can whole kernel corn
Saut the garlic and onion in some olive oil over medium heat. Once they're translucent (NOT brown) add the uncooked rice and saut for another minute or so. Then add all the other ingredients and stir. Cover the pan and bring to a boil. Then reduce heat and cook an additional 20 minutes, stirring occasionally. You can season it however you want; I usually do onion powder, garlic salt and white pepper. Sometimes I use adobo. Whatever. Serve it with a squeeze of line juice. Bomb.
