Endometriosis is a common medical condition where the tissue lining the uterus is found outside of the uterus, typically affecting other organs in the pelvis. The condition can lead to serious health problems, primarily pain and infertility. A major symptom of endometriosis is pain, mostly in the lower abdomen, lower back, and pelvic area.

Reminds me of myself to hear you say you're tired all the time and just want comfort foods because that was me today and yesterday. Tired, muscles all hurt (it's traveled into lower back pain for me), and I want to eat to feel better about myself. not a great strategy in the long run, eh? :-)
As for the workplace, how bad is it? How much do you need your entire salary? The American's with Disibilities Act requires employers with I believe 50 or more employees to allow accomodations for employees with medical issues.
As such, I recently cut down to 4 days a week. I didn't have to tell my work what my medical condition was, just that I had one and needed accomodations of 1 day off a week. It may not be the right choice for you, but I want you to know that you have a choice and that by law they are not allowed to terminate you for health issues.
As for the endo diet, try it in stages is my recommendation. Pull back for 4 to 6 weeks with NO GLUTEN first. Track your progress, and then if you feel better, keep removing that item. if not, put it back in your diet. Chances are you have an intolerance with something which is making the condition worse...although it's probably not the only thing going on so it will likely not be a miracle.
