ChrissyH, I was thrilled to see you had joined! I'm not the only member, lol. I don't have MS, but I do have an autoimmune disease, Hashimoto's thyroiditis, and going gluten free and sugar free does reduce antibodies. Both Gluten and sugar cause inflammation and inflammation raises antibodies. Please feel free to post and maybe you will decide to make the commitment after a while (hope, hope). Thanks for joining!

I don't eat meat. I would also like to know the processed meats that have the less. My man eats process meat's ( salt preserv )

For gluten-free foods, avoid wheat, barley, and I think rye in the ingredients.
For meats with the least sodium (for your man), it's best to avoid processed meats and buy fresh from the meat department. Most processed meats like ham and baloney or canned meats are seriously high in sodium. Reading the labels as you have been doing is a good idea. It should get easier over time. I wish you the best.
