I also think the nutritionist is a good idea, but if not, by some books on fast meals. If you add more fruits to your diet as well, you won't have to cook as much because most people don't cook their fruits. Canned foods (vegetables) can be made in the microwave although I'm not sure how healthy that is..
I think the thought of cooking a new meal every night is what makes people feel like it's too much to do, but cooking a lot of food once/twice a week means you've got leftovers that you can eat later. I'm sorry, I know I'm suggesting all this cooking which you said you don't want to do, but I still think you're gonna have to make your own food eventually.
As for your son--sandwiches, really fast and healthy. My mom has triplets so pre-making sandwiches is really useful. If you have a babysitter you can ask him/her to make extra sandwiches if they don't mind (ours didn't). Uhm... Oh, these nutri-grain bars, easy mac, pretzels, raviolis (in the water for like 10mins and they're done, you don't have to watch them or anything), If you have a trader joe's (or just any place that sells mostly organic foods) you can go in their and get snack food like chips and whatnot.
Or if you really don't mind you could pay for him to have the same food you're getting.
