You can pretty much take it as far as you like, but the idea behind it is you want 90% of your diet to be vegetables, fruit, nuts, seeds, grains... the fresher the better. Then 10% of your diet can be processed food, bread, animal products... etc.
It is hard work, but well worth it. I have a muscle disease and cannot exercise, but I lost 20-25lbs following this diet within a couple of weeks (and did I mention I'm on prednisone??). It's a lifestyle change, you can't go back to eating badly afterwards. You are never hungry on this diet, and there is no need to count calories or anything like that. The hardest part for most people is probably cutting out dairy, but that has made the BIGGEST difference for me.
Like I said, it's a commitment, but so worth it. After a while, processed foods taste fake to you, and you don't want them anymore. I'm also way more alert and energetic, my skin is better.. I love it haha
