Rice and pasta are very high in carbs even though there is no sodium, your sugar will go up. A quarter cup, cooked, should be the meal limit. There are pasta products made from soy and have no carbs at all, This could be a farina flour substitute. Can be found at Asian food stores, fridge section.
Could be that the too many carbs could come from higher glucose levels. You might want to check the blood when you feel hungry.
I too am on coumadin and have to watch the Vit K. However, you can eat foods with high Vit K but you have to be consistant on consumption week by week for your coumadin dose to be adjusted.
