The answer is NOT more sugar -- it's LESS. You need to focus more on slow carbs, especially high-protein ones like beans. More protein in general is a good idea for someone like you. Changing your diet in that direction will prevent the blood sugar from spiking and crashing.
The other main possibility is that you're overmedicating. Too much insulin or pills for the food you're taking in can easily cause the problem you're describing.
To figure out exactly where your problem is, I suggest you take your logbook readings to a diabetes educator ASAP.
