I can tell you how I changed my diet after I was diagnosed as diabetic after eating 1/2 gallon of my favorite ice cream for a year. It's in my family so I should have been more careful. My A1C went up to 7.2!
After that day, I stopped eating ice cream completely and went on this diet where it limited carb & sugar intake. Now my A1C is 6.0 (pre-diabetic) so I'm managing it just by changing my diet. I never took any medication because I wanted to see if I could do this on my own first. I did and so nutrition IS very important in managing this disease.
In general, try & keep your carbs 120mg or less/day and sugar 15mg or less/day. There's more to this diet but this is what I limited my carb & sugar intake to. My A1C keeps going down
