I so have the eggs - later in the day and while I am not not able to eat the toast that was the balance that I had and it did work for me.
Now I have them with tomato, mushroom and onion goulash, or vegetable quiche. Usually for lunch.

The eggs = 120 BG average
The farina = 160 BG average..
These numbers are taken about 120 minutes after the feeding.
Also, a weight loss of 20, primarily due to the big E.
If my bg level is too high before dinner, I might have my breakfast meal again to keep it from rising too much higher.
Way back when I was on a very low-fat diet for over a year, my cholesterol was terrible. Now I don't worry about anything but carbs, and my cholesterol level remains relatively unchanged. The bad is too high, and the good is too low.
