I also found that if you don't have cholesterol issues or aren't worried about fat consumption that your red meats usually had more protein, more fat, but zero carbs so they worked wonderfully for gaining weight without affecting my sugar levels.
Ironically the best thing I found to gain and not affect my sugar levels was Kentucky Fried Chicken! I don't recall if they have them over in GBR but I've been told the original recipe is still healthier for you then your red meats.
Also don't forget your nuts and avocados. Rich in healthy fats and high calorie and also don't affect the blood sugars.
Overall it's a read the label thing. I found protein shakes helped but some of them like I said I had to take extra insulin for to account for the carbs in them. Good luck!
