There are all kinds of gluten replacement options for foods out there. However, I have heard of some people with Celiacs that are so sensitive that they have to watch their shampoo and toothpaste, etc.
This could be a 'good' thing for you in a way. By having this diagnosis and cutting out all gluten you will be able to remove a major source of inflammation from your system. This in turn could help to get your UC under better control. I really hope this will be the case for you.
I remember finding this one brown rice bread that was sweetened with fruit juice...it has to be refrigerated and is very small loaf size, but very dense. I did find that the bread HAD to be toasted in order to make it moist! I found that funny for some reason. If I did not toast it the bread was like eating chalk it was so dry, but toasting made is wonderful. And, even though it looked like a tiny little slice of bread, making sandwiches with two pieces was so satisfying! I actually prefer that bread to the regular wheat breads that we normally buy.

I am doing so much better since eating 98% GF and avoiding nightshade veggies.
Although no disease is good, perhaps there is some controlling the imflammation now, and put off of the surgery.
