I was given this recipe a couple of weeks ago and thought it sounded strange but yesterday I was bored. I went on a cooking spree and thought why not try it, after all it only takes three ingredients. After trying it and finding the results tasty (dennis declared them delicious!) I thought I would share since there are so few ingredients there is little to trigger problems :-).
1 cup peanut butter
1 cup sugar
1 egg
Blend together. Make into little balls (just like most p.b. cookies). Flatten slightly w/fork. Bake 8-10 minutes at 350 degrees until light brown.
I could not believe the results. You can't tell there is no flour. I do think this will be my peanut butter cookie recipe from now on.

It is hard to believe that they would turn out, guess I will just have to try them.
A funny note, when my daughter and I made chocolate chip cookies for the first time together, she read the recipe and it said ...bake at 350. She said "Mom, well it's only 2:30"....meaning what time it was then !! She's so funny sometimes...I just love her!
