Your favorite greens (spinach, baby greens, lettuce, etc.)
Fresh Strawberries
Carrots
Yellow, Orange or Red Bell Peppers
Tomatoes
Broccoli
Avocado
Cucumber
Walnuts
Dressing Optional (olive oil or white balsamic vinegar or lemon juice)
* Quantities depend on number of people you are serving and portion sizes
Preparation Steps
Wash the greens unless already pre-washed and cut up into small pieces
Peel the carrots, rinse and cut up into slices or grate in food processor
Cut the avocado in half, remove pit, peel and dice
Wash all of the rest of the ingredients and dice up
Toss all the ingredients into a bowl and sprinkle with some walnut chunks
The salad tastes amazing on its own, but you can drizzle it with some olive oil, or white balsamic vinegar or fresh lemon juice if that is preferred
Makes a great summer snack or meal

Just about a perfectly designed salad for us COPD folks or anyone who enjoys healthy.
You even threw in some walnut chunks! Congrats! Be careful not to overdo the avocado.
A great one-a-day vitamin pill that we can eat.

with lime juice on it. They have a high oil content (mono-so heart healthy)
I eat slices of avocado in salads but I get a lot of good oil from eating lots of nuts, cooking
with olive oil and eating olives. Too many avocados and I would not fit thru the door.
So I have to be careful even with the high calorie HEALTHY oil. That's just me-
I have a very controlled body weight.

I can't take the walnuts but I could do cashew or feta cheese with :O)
I love my salads dribbled with natural live yoghurt in which I usually crush a clove of garlic, if not using garlic, ground black pepper over would also be a good respiratory aid, or another variation; about 2 teaspoons of lemon scented thyme could also be added - another great respiratory aid.
