Here is a good recipe using bananas and oats. Even though I can tolerate GF oats, I'm going to try using quinoa in place of the oats. When you mentioned banana flour, I thought you might like to experiment with this recipe that uses ripe bananas. I use 1/3 of the recipe and get 6 muffins.
