Celiac disease is an auto-immune disorder of the digestive system that occurs in genetically-predisposed individuals. It is characterised by damage or flattening to all or part of the villi lining the small intestine, which interferes with the absorption of nutrients. This damage is caused by eating anything with gluten (gliadin), a protein found in wheat, rye, and barley...

I'm 35 and just got diagnosed with celiac disease. What is puzzling to me is how does this happen later in life? Especially since this is supposed to be a genetic disease how come it doesn't show up earlier?
Celiac is auto immune. One of the ways the auto immune system beats invaders is to raise the body’s temperature level to try and kill off the invader. The problem is that that invader is gluten. It needs around 600 degrees for 30 minutes to be destroyed because it is a DNA protein chain.
The body can adapt to a lot of constant damage and continue to function. The fever is likely just the auto immune systems way of trying to fight off this invader.
Doctors are familiar with the run of the mill average events in the body. I believe my own observations a research lot more. When I was diagnosed, there were none who actually understood celiac. I had to learn on my own.
You can do this.
