If your son carries the gene for celiac he has celiac. I also carry the gene, that is what my GI told me. It can be an inherited disease. Both my sons were then tested and both have celiac. He needs to get off gluten in order to avoid getting an autoimmune disease.

There are a number of good frozen gf pizzas out there. Udi's makes good single serve pizzas. You can also make your own. Just look at our site. People have shared their favorite pizza dough and toppings. Udi's also makes a decent bagel, but it isn't like the real thing unfortunately.
I'll let Nanny talk about the testing, she knows the most about that.

Just a suggestion--Try making gluten-free "fun." In other words, make lots of new things for the entire family, and let your son (& daughter) be the official taste-testers. (I don't know many young teens who aren't willing to eat.) You might even create a make-shift scoring sheet that they could use to grade your latest food creation. If you don't have a Pinterest account, I would suggest creating one. It's free, and I found more than 2,000 recipes for GF goodies, in addition to breads, main dishes, soups, etc.
Regarding pizza, there are several options. As Lynn mentioned, Udi's has pre-made pizza crusts (2 per pack). Bob's Red Mill has a GF pizza mix that makes a good-sized pizza. Recently Pillsbury started to offer pizza dough, which makes one 10-inch pizza crust. And there are several home-made pizza crust recipes online, using many different ingredients such as cauliflower, cheese, GF flour, sweet potatoes, zucchini, etc. So there are options. Try to find one to the liking of your children. There is "life without gluten." Your son just needs to become convinced of this fact on his own. It will take time, but once he realizes how sick gluten makes him, he will be more cooperative.
