Celiac Disease Support Group
Celiac disease is an auto-immune disorder of the digestive system that occurs in genetically-predisposed individuals. It is characterised by damage or flattening to all or part of the villi lining the small intestine, which interferes with the absorption of nutrients. This damage is caused by eating anything with gluten (gliadin), a protein found in wheat, rye, and barley...
Here's something else that might help you. I prepare and freeze many items in bulk. For instance, I like Green Giant's fire-roasted root vegetables. But I buy the fresh veggies myself, cut them up, and make 5 bags of the same veggies for the price of 1 at the grocery. Other days I use my crock pot to make a big batch of food to eat, such as chili, soup, stuffed peppers, chicken, etc., and then package it in individual portions for the freezer. That way I can have easy to prepare meals that simply need heated up. And I love to do MANY items on the grill (ribs, hamburgers, hot dogs, steak, etc.), and, again, package in individual servings and freeze. Hope this gives you some ideas for eating GF.

If you take prescription medications or supplements, you also need to look for gluten in them, which can be a bit of a task. Sometimes the same med or supplement made by different manufacturers can make a difference--one with gluten and the other without. Your pharmacist might be able to help, but not always. You might have to contact the manufacturer. I buy supplements from Vitacost and use their filter selection for "Gluten-free" when I purchase things.
