ALSO I found Environkids rice bars at Whole Foods, It was about $4 for a box of 6 bars. They are for kids, but they are good. They taste like rice crispy treats.
Then, I found Oskri bars at Walgreens but I bet there are other places as well. They are nut, coconut, or flax seed bars that are like granola bars, they have a ton of flavors. They are more expensive then regular old granola bars but they are not super expensive either.
Also I found a lot of gluten-free items at Costco, if you have one of those near you. They have gluten-free crackers, cashew/pumpkin chews, Quinoa, and some other fun snacky type foods. Their prices are really great, you just have to buy a lot of them. But the crackers I bought were in small packages so they didn't go stale.
To make your own: date paste (or pitted dates), other dried fruit, nuts/seeds/PB, a little chickpea flour, quinoa flakes or crisped rice. dump into a food processor and process. if you do GF free oats, you can use those instead of the quinoa. A little juice (juice concentrate or agave syrup is tastier but more calorific) can thin them out if needed, and then wrap in plastic wrap or baggies. Store in the fridge/freezer unless you're going to eat them promptly.
Possible flavors: lemon zest, vanilla extract, salt, cinnamon, cocoa, chocolate chips, or candied ginger (my fav), etc.
I get date paste at a middle eastern grocery (~ $3 for 12 oz). I'm sure you can order it online.
