Even though your gastrointestinal discomfort is almost gone, your intestines probably need a lot more time to heal. It takes at least 6-12 months (some say up to 18) for the intestines to heal, and that's if a person faithfully remains on a 100% gluten-free diet. Then there's an issue of whether or not a person has any other food intolerances or allergies. For instance, some people must also eliminate dairy, soy, corn, or another food product. Some people even have to go on a completely grain-free diet.
As for weight loss, everyone is different. But you shouldn't be starving yourself. I've read that if you don't eat sufficiently, your body goes into "rationing mode" and begins to store fat, which means you won't lose weight. You should eat healthy foods, such as lots of fresh vegetables, salad, and fruit. If you don't have a Pinterest account, it would be helpful to create one.
