The way we grow wheat and all of the processing for bread is different than it was at the start of the agricultural revolution. I’ve even read that people with gluten issues from the US will visit parts of Europe and eat bread and have no side effects. I think they were gluten sensitive, not celiac. But it’s much less processed there.
