Firs things first. You MUST eradicate gluten AND dairy from your diet. Those two are highly inflammatory. The focus should be on reducing the inflammation in your gut which will ultimately benefit your entire body. Next, if you don't have SIBO, take a daily probiotic to restore your intestinal flora. Definitely DO NOT eat any fast food, sugary foods, frozen meals, etc. Focus on home made foods made with healing herbs and lots of cooked vegetables. Take heed to avoid nightshades for a while (e.g. tomatoes, peppers, eggplants, to name a few). As these can trigger your symptoms and cause more inflammation. Reduce stress. Take a daily vitamin D supplement. Omega-3 two times per week and a quality multivitamin daily since celiac causes MAJOR malapsorption issues.
Last but not least, try and find a good quality functional medicine practitioner that deals with celiac. He or she will help to do blood work, prescribe the right supplements for you and overall guide you holistically in the right direction so that you can ultimately manage and potentially heal your celiac disease.
