I have a gluten sensitivity and an autoimmune disease, and I was wondering: what are some of the best resources you would recommend to someone who is going gluten free?

Any advice on how to make gluten free fun for kids?

Hi, okapi2. An excellent source of GF recipes is Pinterest. I have found thousands of GF recipes (literally). Also, there are several blogs that deal with packing lunches for a GF child, or eating GF on a budget, etc. Here are some weblinks to help you begin.
