My therapist told me this would happen, but based on how badly he treated me towards the end and how much he acted like he couldn't stand me and just wanted me out, I never believed it. It's only been a week since I've been out, and he's texting me about how sorry he is for hurting me, how he never thought he'd miss me so much, how he feels like he's having a break down...wants to talk to me about the things going on in his life etc. He has not asked me to come back and still says that while he loves me he is not "in love" with me. WTF? Is this going to get worse?

Sorry you're going through this.
Continue to tell yourself that his help is with professionals trained to weed through his brain, his childhood and his anger that makes him treat others so poorly. You're not those professionals.
Go no contact so he realizes you are not there for him to contact to pretend to be helpless. He's trying to reach out and hurt you some more. Don't fall for it.
That means he can have sex with you, but doesn't want anything that resembles commitment.
