If you are having manic episodes on your meds, your meds are not working. I know, because my meds are not working. I was diagnosed bipolar over 25 years ago. This will be my fourth medication change (when my shrink finds another ssri that i can take that actually works..) No one bothered telling me, this can happen. In fact, no one ever told me many things about bipolar that i have learned in the years since.
My stress is minimal as i live alone with a few pets. I dont stress over the car or broken things in my home, there are always some broken things as i am also quite poor ad dependent now on others. When people stress me out, i walk away or go home but, if you are living with someone who is stressing you that is far more difficult.
I used to cycle when i was younger and more able, but i do still walk. I just walk up and down the road in front of my house, but i live in a rural area where i can literally walk for hours and not see a vehicle or person, if i was able to walk for hours.
But i enjoy my walks, seems you enjoy crafting. I also find a hot long bath with relaxing bath salts and oils, (I like lavender and vanilla scented oils) Somtimes i seek uplifting shows on tv, or comedies or even listening to comedians, because i enjoy laughing, and it is also great stress relief.
You mention prayer, and also mention continually thinking about, (some offensive actions or something) that just makes you more and more angry. Probably the most stress relief i have is prayer, and working to obey God's word, that i have stored up in me by listening to it. I also find christian music comforting.
I know this sounds crazy but, there are verses that come to my mind, because i have learned practicing trust in God, and standing on His promises gives me what i need to get through every day and any situation. When i get things I do not like, my first reaction is to Thank God for whatever it is, whatever offense, or broken thing, Like my meds not working, and my shrink cancelling my appointment, and unwilling to write a script for the new med she had me run by my cardiologist without seeing me, I thank God because HE tells us to, (always giving thanks to God the father for all things) and because He promised us, "and we know that in ALL things God is working for the good of those who love HIm and are called according to HIs purpose"
It also helps me to write things down, and to speak with others about whatever i am going through and dealing with or feeling. Somtimes just sharing what i am feeling changes how i feel.

With regards to what can help you mindfulness/meditation helps a lot of people
Exercise/walking might help some BUT if you're in a mixed state you need to talk with your doc and until then work on keeping your anger under control with other people sweetie
