I've been dating a little bit recently and am not sure about when to tell the other person that I'm bipolar. Not just that- I also deal with bulimia, anxiety, and PTSD from prior relationships. Basically, I have a sh*t load of baggage. I'm worried about being labeled as 'crazy' because of these issues, and am not sure about when would be appropriate to disclose this information in the first place. I'm a good person, and I like to tell myself that I'm lovable and worthy of love. I don't want to be written off because someone has preconceived notions about mental illness. I don't know if I'll ever meet anyone who's willing to accept and/ or understand me.
If anyone has any advice, it would be greatly appreciated.

It sounds like it's too soon to get into personal medical problems.
Let him get to you know better.
You will find someone to care for you. I found my honey right here on DS and it couldnt' be more perfect.

I would tell only if the relationship seems like it is getting serious. I have never had to deal with this. I am just myself and my husband knew something was wrong and I did too but he still married me. I wasn't diagnosed until we had been married awhile. We both knew I definitely had erratic mood swings and alot of depression. I believe when the right person for comes along you will feel comfortable telling them and they will love you enough to accept your illness. Alot of guys avoided dating me that were around me because they will would see me one week and I was on top of the world and then the next I was at the bottom of a deep dark pit. My husband saw it but he still loved me and wanted to date me.

Yes, you should ask wait until things start to get serious. I started online dating from a couple sites for people with mental illnesses. I correspond with 2 men messages sent on the sites. Neither one of them live in the USA like me so it would be hard to get serious. The this guy and I text and talk on the phone. He lives on the opposite side of the country as me. Wish someone near where I live was interested in me but I is nice to make new friends.
I don't know if anything I said was helpful but it was good to share dating stories.
