Also, when my schedule was more hectic, I used to prepare some things ahead of time (the night before?), meatloaf, or chicken dishes, that would be okay to refrigerate and pop in the oven the next eve after work/etc.

Mashed potatoes with the sauce the hamburgers made

On a saturday when you are home toss a pot of beans on the stove - use the entire bag. Store in fridge they will last for a week at least. From these beans you can make a few things
Tostadas
Chilli
Refried beans (that can be served as a side)
On a weekend cook up a roast - not in crock pot you are gonna have to do it oven style (lol will come show you how since its not like a chicken well sort of is) Have a portion of that for dinner that night served with vegetables that have roasted with the meat and rice or barley pilaf as a side (both lower in calories than most ways you cook potatoes)
Use the left over roast accordingly
cut some of it up and a few potatoes - fry in olive oil (small aboout) until potatoes are crisp (this is hash in truth) and then crack egg on top of each hash portion and cook til egg is set to your liking
Use some more of the roast as filling for french dip sandwhichs - use roast drippings to make up the juice for dipping. Serve with vegetable and mandarian orge jello salad - really good, take two cans of mandarian oranges drained and mix with 1 big box or two small orange jello and refrigerate til set

fresh pasta only takes a few minutes to cook and creme fresh , blue cheese and bacon bits sauce mmmmmmm
takes ten minutes tops to make
Anyway, I agree with the others, Cook a bunch of stuff over the weekend, then just add fresh veggies ect on the specific day and there you go. I seem to do well with that idea.
