My suggestions is to go see the doc to make sure that nothing is physically wrong. If nothing is coming up (sensitivities will not), I would do an elimination diet to check for it. Essentially do not eat gluten for 4-6 weeks. Reintroduce it by eating a full serving or two for breakfast and lunch after the break from it. When you have a break from something and reintroduce it the symptoms will be more noticeable and stronger. Wait three days before eating it again since some symptoms take awhile to show up. Most people will know before bedtime if it is a sensitivity.
If you find you are sensitive, stay away from it for four more months. Reintroduce again using the same method. Sometimes the break from it will reset your body and you will be fine with it, but most times you will find you are still sensitive and you just stop eating it. Even if you are not sensitive some dieticians and many alternative medicine gurus don't recommend eating gluten products more than 3 times a week.
I did this recently. I cut out corn, soy, and gluten. Ended up sensitive to both corn and gluten. More so the gluten than anything else. I am now in the wait period before reintroducing it again. I have felt a lot better physically for a few weeks now.
I also recommend putting a probiotic into your daily routine. Taking a quality probiotic can help with a lot of digestive issues and they are perfectly safe. : ) Good luck

since you are not really getting any fiber you are going to have all kinds of digestive issues.
