working on me

Well I just finished day four of my new life and new diet before surgery.  I must say that I am really having a hard time getting over how much food I am expected to eat on this diet.  It's all healthy food and for once its not a diet that I count calories or carbs.  I just have a list of things that are safe and things that are against the rules (most of which I didn't eat anyhow) and the amounts that I can eat.  Instead of counting I just watch the things I eat which makes it pretty easy.  I lay out what I am planning on eating the next day and there I have it.  What is wonderful is that everything I eat I can feed to my son as well and he just loves it.  The new diet is the South Beach Diet, while it's not a new diet in the world it is new to me.  I am also reading the book and learning things that I didn't know.  Don't get me wrong I have learned a lot of things during my life about food, how it effects me and so on but I am still learning a lot about different foods.  I mean never in my wildest dreams did I think that carrots were high on the glycemic index but they are.  Granted it takes a lot more carrots to raise the blood sugar than some of the other foods but wow that came as a shock.  This is doing some real good to my body as well and I have noticed.  I haven't had to take as much of my quick acting insulin and have noticed that my numbers are getting lower.  I am finally waking up to numbers below 200 without eating bad for me foods because I am eating the right kinds of carbs to help my body metabolize and eating more foods than before.  This is where the head thing comes to play because all my life when it comes to dieting I have heard you need to eat less, eat less, eat less.  With this diet I am eating more than before.  Its something else I tell you that I'm still getting used to that idea but my son sure enjoys it because we have something new every day.  I'm really finally starting to feel healthy on the inside and this excites me because I know that the healthier I get the better off I will be.  This diet makes it easy to go out to eat with my family and really enjoy myself knowing what choices I can make and know that I won't have to worry about counting up the calories in my head to make sure I am not over.  I also make healthier choices and so far so good I am loving life.
