This or That
I have such mood swings in my head, but I try not to include anyone in this. It is MY head and no one did this to me. I am the one with the mood swings, not anyone else. It is my problem, not anyone elses. I went to a party tonight with my brother, I used to be the life of the party. I am not in the mood for that right now, I hate that. I am so good at parties. I could go on and on and on about many, many things, but I just did not feel like it tonight. What am I going to do?
My favorite subject is food, I have amased so much knowledge about food that I can't believe it. I like to study the history of certain foods. My favorite is Macaroni and Cheese because it starts out with a song. Yankee Doodle went to town riding on a pony, stuck a feather in his cap and called it Macaroni. The Macaroni was a club in England around the time of the revolutionary war. The English would sing that to make fun of us. If something was called macaroni, it was considered very posh and upscale, so Yankee Doodle, us, sticking a feather in his cap was an insult.
America needed a comfort food, England had bread pudding. Mac an Cheese was invented at Thomas Jefferson's estate, Monticelo. He loved Cheddar Cheese, one year for Christmas, he got a 100 lbs. wheel of cheddar from Cheddar, England. From that he was called, "The Big Cheese". He ordered an extractor for making macaroni from Italy, but did not like the product it made so he invented his own. The Cheddar sauce is what is called a Beschamel Sauce. You take a roux, flour and oil, and mix it with slightly heated up Buttermilk. You add grated cheddar cheese to finish the Cheese Sauce.
Cheddar has really changed the world. Ask yourself if you had had cheddar today.
In 1947, there was an Air Base on the Texas border. Three guys were stationed at that base and their wives decided to go shopping that day in Mexico. That afternoon, they got a little hungry and stoped into a cantina for food. The chef told them that he had very little because he was just starting dinner except for some tortillas. He fried the tortillas in oil and broke them into chips and served them in a cheddar cheese sauce that he made. In 1962, he got a jobat the Texas Astro's Statium and we have had his creation at every sporting event since. By the way, his name was Nacio or Nacho.
