The journey begins...
Had my journey start last Tuesday(3/6/12) at orientation, and was saddened that it would take 6 months to get to the surgery, through a bariatric program. I've made my peace with that though.
Had a trial done of the 1500 calorie diet that Wednesday, but didn't really do it on Thursday and Friday. I just didn't have the groceries and things I needed.
So I officially started my 1500 calorie diet on Saturday. Big system shock for someone that loves food. Had headaches for the 1st 3 days, but my body is adjusting now, and I am getting used to it.
Some of the foods I really liked, but some I am going to have to get creative with(oatmeal, and plain greek yogurt, etc...). As an amature chef I am actually enjoying coming up with "gourmet" diet dishes at around 400 calories a pop, with minimal fat.
My favorite so far I call my "Italian Enchilada" and its made up of a whole wheat tortilla, 3 turkey and pork meatballs(spinach and red peppers in them), 1/2 c. of tomato basil sauce. Roll the meatballs(heated in the sauce) into the heated tortilla, top with the rest of the sauce, then on the side or top add 1/2 c. of 1% milkfat cottage cheese. Its right around 400 calories, with little fat, and lots of protein. Plus its delicious!

Hi Justintx, Thanks for the recipie. I too found out right before I met the surgeon the same day that my insurance company requires 6 month wait to do 6 nut/dietician classes...one a month. I was lucky though that the same day they had an openning for the first nutrician class. I won\'t see the dietician until next month so for now, I am on my own diet until then...They give us guidelines but haven\'t set me up on anything yet. I have lost 11 pounds though on my own. But I won\'t last long on my own diet so I hope I get some personal instructions soon.
