This sparkling wine from the cold climate of Northern Tasmania is a complex, elegant wine that shows brioche, nougat and yeasty notes on the nose. A fine persistent bead seamlessly carries these flavours across the palate with brilliant texture, refinement and a classic refined finish. White floral aromas mingle with early season peach, honeysuckle, lime zest and fresh ginger complemented by hints of brioche and pine nuts. Fine natural acidity defines Cave Block Chardonnay and accentuates the flavours of lifted white peach and ginger marmalade. Hints of flint and spice add an extra complexity as they combine with the fine texture and acidity providing a fresh, lingering finish. The earliest vineyard was planted in the suburb of New Town in 1821.
Soils throughout the region range from dolorite and sandstone to alluvial sediment and igneous volcanic rock. The benefit of a moderate maritime climate and cooling Southern Ocean breeze means winemakers are able to deliver absolute quality.
