Sweet Potato Soup
Not to be outdone by our culinary genius lycesq, I wanted to share a new recipe that I discovered last week. It was published in a quarterly magazine that is published by our local hospital center, so it's GOOD FOR YOU, too. With fall in the air in this part of the world, there's nothing quite as good as a piping hot bowl of soup. Bon appetite!
SWEET POTATO SOUP
6 sweet potatoes, peeled and cubed
2 leeks, chopped
2 onions, chopped
4 ribs celery, chopped
2 cups (low sodium) chicken broth
1 T. parsley flakes
1 tsp. tarragon
5 cups water
1 tsp. freshly ground black pepper
1 - 13 oz. can evaporated milk
2 T. chopped chives
Combine all ingredients except milk and chives in slow cooker. Cover and cook on low 10-12 hours or high 3-4 hours. Stir in milk during last hour; if desired, run it all through a blender before serving. Garnish with chives.
Serving size= 1 cup; Calories=130; Calories from Fat=5 - ZERO Fat, ZERO Trans Fat, ZERO Cholestoral; Sodium 115 mg; Total Carbs 26 grams (Dietary fiber 3 grams; Sugars 11 grams); Protein 6 grams
This soup provides 300% of the daily requirement of Vitamin A; 25% Vitamin C; 15% Calcium and 8% iron. GOOD STUFF!

Sounds yummy. I\'m going to write this one down because my D might like it. I made a broccoli and cheese soup last night I saw on a cooking show. It\'s soooo yummy. Maybe you should put this in the Food and Recipes DS group.
This sounds almost like the pumpkin leek soup that I love so much. However, it has heavy cream in it. Not THAT good for you, but, wow, what a lovely meal with some toasted thin french bread that is very crisp! Thank you.

@Anyse, I love creamy soups and have found the recipes that instruct you to puree or blend them in a blender have a creaminess to them so you don\'t need the cream. I love leeks too
I don\'t have a slow cooker - wonder how one would modify this for a regular stove? Cook the potatoes first? Just put the whole shebang together and cook for a shorter period on low? I\'d like to try this but another week as I STILL have the ham bone from Thanksgiving in my fridge and finally picked up some dried split peas to make green pea soup! yum.
