Press patties down with a spatula or burger press. Lay a spring roll wrapper in front of you so it looks like a diamond, one corner is pointing towards you. Add the chopped pickles and chopped tomatoes into the bowl of ground beef filling and mix well.

If you are familiar with Korean BBQ, you have probably heard of Ssamjang. It’s a spicy Korean dipping sauce that’s used for dipping BBQ meat. Though regular Ssamjang sauce won’t go well with these spring rolls as they are a bit too thick and may overpower the taste. So I diluted it a bit so that you can enjoy it with these delicious rolls.
At first there was way too much filling. Eat the first one you make to get a feel for how much of each ingredient you want in the roll. Scoop out sauce into serving bowls instead of dipping straight into a communal bowl.

Remove from heat, place the cooked filling in a colander to drain excess juices and allow to cool. Try to use the smaller sized wrappers because because the egg rolls will cook quicker and crisper. Stir in the cornstarch slurry to thicken. Remaining, uncooked lumpia can be stored in a freezer bag and kept frozen up to a month. When you're ready to cook, fry them frozen, no need to thaw. Rolls can be meatless by adding mushrooms and cabbage instead of meat.
