MILLION DOLLAR CHICKEN

MILLION DOLLAR CHICKEN This recipe won the Pillsbury cook-off, hence the name! It wasn't me who won though, too bad. This is REALLY EASY! Quantities do not matter at all. (In my version, LOL!) Put a whole lot of boneless skinless chicken thighs in a baking dish, one layer deep. (Figure on 2-3 pieces per person.) Sprinkle with raisins (black or gold) or currants. Sprinkle with cinnamon, cumin. Cover with chopped onions. Now pour over all a whole big jar of salsa, whatever kind you like. I use Pace Picante, usually, the medium hot version. Cover with glass lid or foil. Bake at least one hour at 350 or up to 3 hours at 275. (oh -- we could do this in a crockpot!) When done, sprinkle with toasted sliced or slivered almonds. Delicious with brown or wild rice, couscous, or quinoa. Leftovers: YUMMY!! xox Sarah

It sounds delicious! Do you recommend one over the other with the raisins and or currants? Just wondering? I can vouch for this recipe ~ so, so easy and the chicken is soooooo tender, flavorful and juicy! I\'m a big one for easy and delicious and this recipe is a HUGE winner!
