Master The Art Of Thailand Tourism With These Ten Tips

25 26 Khrueang chim, considered a building block of Thai food by Chef McDang, may come in the form of a spicy chili sauce or relish called nam phrik (made of raw or cooked chilies and other ingredients, which are then mashed together), or a type of dip enriched with coconut milk called lon. Traditionally, a meal would have at least five elements: a dip or relish for raw or cooked vegetables (khrueang chim) is the most crucial component of any Thai meal.

A Thai family meal would normally consist of rice with several dishes which should form a harmonious contrast of flavors and textures as well as preparation methods. The dishes are all served at the same time, including the soups, and it is also customary to provide more dishes than there are guests at a table. Thai meals typically consist of rice (khao in Thai) with many complementary dishes shared by all.

You should be able to find Isaan food anywhere in the country. The more rustic and original version of larb is made with uncooked meat and often comes filled with blood. Larb, a minced meat salad usually served with roasted broken rice, plenty of mint, lime and chilli is another Isaan staple.

A lot of the tastes are very closely related to Lao food with their som tam being far saltier and fishier and less zesty than Thai som tam, which normally comes filled with lime juice, dried shrimps and peanuts. Spicy som tams (green papaya salads) of numerous descriptions are central to a lot of Isaan food, as is khao niaow (sticky rice) and various grilledmeats. My favourite, though, was Khao Soi Khun Yai, a small cart-and-tables set-up on a patch of waste-ground beside Wat Kuan Kama. To get a sense of the dish's Chinese-Muslim origins, head to the bustling, canteen style Khao Soi Islam, where the broth is light and the noodles are spaghetti-like.

Khao soi is Chiang Mai's famous noodle soup, made with boiled and deep-fried egg noodles in a chicken or beef, coconut curry broth, served with lime, roasted chilli, mustard greens and shallots. Unlike most Thai dishes, which are eaten with fork and spoon, Thai noodles are typically eaten with chopsticks and spoon, a reflection of the Chinese origin of the cuisine. Otherwise, Thai noodles are normally served in soup, either with spicy red pork (moo daeng), chicken (on the bone), and occasionally coagulated pigs blood.

Other than pad Thai noodles, rad naa and gway tiow are stir fried noodles served with beef, chicken, or pork; condiments, including dried chilies, fish sauce, vinegar, and sugar, are available to tailor to individual diner's taste. Most Thai noodles are made of rice, though egg noodles (ba mee) and mungbean based glass noodles are also common.
