Just for fun-- Favorite Dishes...

I know this is not one of the food groups, but I thought it might be fun to open this to anyone interested .  Have you a favorite food or dish(es)?  ( This may just give us a peek into some  specialties of certain areas.  You never know)


In Pennsylvania (close to where I am) there are alot of Pennsylvania Dutch who did grow up with lots of meat and potatoes (and a few very funky that I just became aware of in the last 10 years or so.  Some that  sound disgusting but they say are quite the surprise.)  I am just getting the feet wet with risk taking... not sure pig's stomach is on my list.  I would take a vanilla ice cream hands down. haha


PA is the land of Tastykakes, A-treat sodas, Unique Pretzels, Lebanon bologna, and creamed chipped beef  ( a favorite I do occasionally enjoy. )



Lately I have been hooked on shrimp and veggies over  a small amt of wheat pasta.  Broccoli , mushrooms, and shrimp sauteed in garlic butter  and tossed over a small amt of pasta and topped with some grated parmesan.  YUM.

My mom taught me how to make her pork tenderloin which is one of my favs.
You buy pork tenderloin strip off the silver sinew stuff then slice it about inch thick. Beat it between two sheets plastic wrap with flat mallet to make them tender and thin. Egg wash and bread crumbs then brown them on frying pan. Pull out after browning place into baking dish deep glass then cover with some milk and heat in oven Thinking 350 for hour or so.
They come out so yummie bubbling goo in the pan and kind of crust from the bread crumbs and eggs.

Second fav is spinach soufflé.
I do more cheese than mom did. It takes cottage cheese, grated cheddar sharp cheese and butter few eggs to help hold it together and add few tablespoons of flower to soak up butter too
Mix all in bowl then add to greased baking dish.
Oh did I mention the box of frozen chopped spinach thawed? Yummie stuff

My mom was such a good cook and she would try to show me how to make stuff but I wasn’t very interested. Wish I had! She could make anything out of a few simple ingredients.

I grew up in a Wisconsin so it too was very meat and potatoes growing up. My grandparents were raised on farms and moved to the city when they were young. Growing up I was kind of horrified with the cow tongue and head cheese and what not.

Cheese is a staple here too. Raw beef and onion was a big Wisconsin thing. AKA “cannibal sandwiches,” you don’t see that too much anymore but growing up it was a mainstay at every holiday party or wedding. Pickled herring was a big thing too at parties.

We have a very large Mexican population in Milwaukee with wonderful, truly authentic Mexican restaurants. So to me, simple tacos (corn tortillas, steak, little cilantro and onion) are probably my favorite food.

The head cheese and tongue is disgusting I agree. I am curious about the raw beef? Was it like a very rare roast beef? Here we have beef and some bolognas that are heavily smoked and then thinly shaved or sliced. When I think raw, I think of steak tartare . My curiosity again...

Yeah It’s essentially steak tartare. It’s literally raw, lean ground beef served on top of rye cocktail bread with sliced onions, salt and pepper. I love it, haha! I haven’t had it in years though.

I remember tongue too.....I actually enjoyed it....once got past the part that it has taste buds...LOL

I do think this particular way of serving it is a regional thing, in and around Wisconsin. Maybe it started with the European settlers here or the farming communities or both.

Yeah we like our sausages and bratwurst here too. Milwaukee used to be predominantly German back in the day. . Not a huge German food fan but brats are pretty yummy.

Bill that’s funny! I think if the tongue is prepared well it’s not bad. I just hated how it looked before it was cooked. It really freaked me out when I was young.

what freaked me out was peeling off the coating of the tongue....Mom used to have to do that....you do not eat that.....it gets boiled I believe but I was just a young kid not really aware of how things were cooked when we had a tongue....

Another thing is pig's stomach. I would not try that either.
They say it is basically a sausage and potato filling stuffed inside. (Guessing the actual stomach is like a casing to hold it together?)

I’ll try almost anything as long as it’s prepared by someone who know what they’re doing. Menudo is a Mexican soup made with cow stomach and I like it very much.
