Compared to chuck rib or sirloin, N34 Tenderloin has mild marbling. Placed in a vacuum pack with consomme soup, the tenderloin is cooked slowly at approximately 70degrees for about one hour. Almost no oil is added to the consomme, creating a light dish that allows the flavor of the beef to shine. Placed in a vacuum pack filled with consomme soup, the pack is placed in boiling water for nearly 3 hours to reduce and tenderize the fat. Plated with a raspberry sauce to express a vibrant garnet color that resembles a fine wine.
