How can I help my husband pack without Anxiety?

My husband is packing to go to his new job in another city to be gone for 2 weeks. He just asked me to help him pack. My anxiety which was about level 4 today (a miracle) went to level 8 immediately and I am now beginning to have IBS (stress triggered). He was VERY unhappy when I HAD to tell him NO, I couldn’t help him pack.
 My anxiety is over:
My husband broke his toe 3 days ago. I am very sorry for him and wish I could help but my anxiety has been at level 8 out of 10 for about a month now constantly triggering my IBS. I have learned “DO NOT PUSH ON” when I am at this stage but it seems as if I can not get my activity down so my anxiety remains high.
 I am totally disabled and have difficulty even standing for more than 3 minutes. When My husband packs, I am very sad he will be gone and worried about how I will manage (he is my caregiver) without him being here.  Also always before when he packs, my anxiety in helping goes high because of his tone when he tells me to get this or that and I never recieve any positive feedback for anything I do (this is normal for him). His response to my saying no was very nice faced on the outside but hurting on the inside.
 This week after years of asking, he said that he would CONSIDER letting me hire someone to come in and help me with the housework. It’s not a money issue except every cent we save is more for our retirement or giving for God. That makes me feel guilty for even asking for my needs.
I started today with a level 4 anxiety and no pain. Now, I feel very guilty and am in IBS pain. I know that tomorrow, since my stress/anxiety is high today, my fibromyalgia pain will be high also. How can I get well enough to help?
 I love my husband. When I broke my leg and had to have it up for a whole year to heal, he helped me bathe and everything. I want to give back.
 God, please help me!  And Help Him because I can't!
