Good foods

Quick note on the value of legumes ... low glycemic index, high in fiber and protein.  They fill you up with no fat and no cheap carbs.  Lots of of vitamins and minerals.
They are a great food for diabetics and for dieters in general.
Lately I've been flavoring with cumin, tumeric, curry powder, mustard powder and ground or whole black peppercorns.  A half a teaspoon of sea salt to a large pot of soup is adequate.
Also -- parsnips and turnips.  My grandmother had these worked into every other meal.  I am rediscovering them.
 
People are amazed that I have stuck to this diet ... I am happily surprised and feel grateful that it has been the case.  It feels odd taking any credit.  I have tried to do what I was told and educate myself.  How much credit can you give a drowning man for grabbing a life preserver?  There is a part of me that is just operating on survival mode.
I update this goal from time to time and the real goal is to live well, one day at a time.  There is no finish line.  The path is the goal, the journey is a spiritual journey.
