Food Journies and Journals

Elimination diets are not the typical type of diet.  You don't go on them to loose a few pounds for bathing suits, nor are they the latest craze.  You go on them to find out what's eating you-- pun intended!
My experience with elimination diets has been pretty positive as far as my Fibromyalgia goes.  I have been able to eliminate MSG, processed foods, refined foods, chemicals, preservatives, and dyes from my diet.  It has helped with my symptoms tremendously. 
The only tedious part of the elimination diet is being faithful to journal writing.  You have to enter every food you've eaten for the day and what, if any, type of reaction you may have had from the food.
I find myself having to go on a food journal journey again because I have yet to squelch my four year battle with hand eczema.  My itching is so irritating that I can't take it anymore.  I'm not a fan of irritation.  It can be annoying-- putting it mildly.  There have been days when I wished I could just pull off all of my skin because I so desperately needed relief.  I have tried everything I could think of and almost gave up any hope of ever seeing normal hands again.
Yesterday, though, I found some new hope.  A neighbor who does medical coding for a homeopathic doctor suggested I look into a wheat sensitivity.  This doctor believes that eczema is due to an allergy to wheat.  It took me a back a little because I started to realize that this may just be the case for me. 
It hasn't been until recently that every major food manufacturer added the cheap food ingredient known as wheat to almost every one of their products.  Wheat is a cheap bulking agent and many food producers are using it in foods.  I never thought of wheat as a problem when I first started my elimination diet because back then, there were less foods containing wheat.  So now I have my work cut out for me.
