Nowadays Ginger has been used in various Ayurvedic medicines in powder form. Drying ginger in the solar dryer is very effective in terms of its Quality evaluation , . The quality of dried ginger was found best in various parameters like texture, flavor, smell, twisting and shrinkage compare to Open sun drying. So the Design of the Developed Cabinet solar dryer, Comparison of the outcome of a solar dryer for ginger drying with & without thermal energy storage material are the novel concepts in this manuscript. Calculation of the payback period for the part-time family income is also a major advantage of this developed solar dryer. The purpose of this research paper is to perform experimental analyses of system in drying of various agricultural products under different climatic conditions.

In hybrid drying the secondary source was mostly the conventional source of energy that does not make the dryer fully sustainable. An infrared assisted with hot air dryer was designed and developed to retain the quality of turmeric during drying. It was observed that IRHAD at 70 °C showed higher drying rate and recorded 26.98% and 35.21% lesser drying time than IRD and HAD, respectively. An increase in drying temperature (up to 60 °C) increase the curcumin, oleoresin, colour and starch content and further increase in temperature degrades the quality of the turmeric.
A new combined CVM method allowed obtaining high quality dried material compared to the CD and VMD methods applied separately. The drying process affected changes in the appearance and brightening of color, and also increased the contribution of yellow color in the fruits. The results show that the quality of dried chokeberry depends on the method and conditions of fruit drying. Many authors have studied the variations of volatiles, non-volatiles or antioxidant capacity of ginger induced by drying process.
