The Arawak Indians were one of the previous inhabitants of those islands and they perfected a cooking method which rose to become one of the most popular techniques to cook any place in the world.

Jerk is maybe among the most recognized Caribbean foods and is made by slow cooking strips of goat or pork meat experienced with a mixture of spices.
