Banana Bread Recipe

Here's my banana bread recipe.  It's basically like every other one out there but I do the butter or oil part a little differently.  


Banana Bread


You can mix this together all in one bowl which is why I like this recipe, it's super easy and delicious.  You might want to whisk the egg separately before adding but I don't.


Preheat oven to 350 degrees F


Mash two large ripe bananas in a medium size bowl.


Add 1/8 cup oil to a measuring cup and then add plain unsweetened applesauce up to the 1/2 cup mark on the measuring cup so you wind up with a total of 1/2 cup of this oil and applesauce mixture


Mix the oil and applesauce together in the measuring cup and then add to the bowl with bananas


Add 1/2 teaspoon baking soda 


Add 1/2 to 1 teaspoon vanilla


Add 3/4 to 1 cup brown sugar 


Add one free range egg 


Add one and a half cups flour


Add a pinch of salt 


Mix all the ingredients together in the bowl until smooth


Pour into a greased bread baking sized pan 


On top sprinkle walnut pieces, cinnamon and mini chocolate chips : )


Put in oven and bake for about 55 minutes.  You can test doneness with a fork.


Take out of oven and cool, remove banana bread from baking dish, slice and eat.



I am eating a piece right now.  Yummy.

You're welcome. I saw your post about how to stay warm. I don't know. I always feel toasty and warm when I'm baking in the kitchen. Wear warm socks too! I've noticed that makes a huge difference for me.

Ok! I like it because it all goes into one bowl. Very little mess to clean up and it tastes great.
