Shubat is made from unpasteurized milk and its production involves addition of 25% shubat culture composed of yeasts and lactic acid bacteria. The final product consists of 500 mg/l vitamin C, 3.8% protein, an acidity of 90–130 °T and 1.0% alcohol (El-Agamy2017). The fat content of shubat is reported to be 8% and it has white colour. Tuberculosis and some gastric and intestinal diseases claimed to have been cured by consuming shubat (Alhadrami & Faye2016).
