Today, I chopped all the carrots, celery, and onions for tomorrow's big meal, and OH MY GODDESS---I diced onions so they are diced not big fat chunks!!!  I love the new KitchenAide chef's knives so much, and let's face it, I cook every night.  I can't believe I waited so long to get them! OK, one more thing.  I made the VERY BEST PIECRUST I've ever made in my life today!!!  I cooked the scapes with sugar and cinnamon, and it is flaky, tender, and luscious.  Plus, it stayed together when I lifted it into the pieplate (meaning I didn't have to piece it like a quilt).  Finally, I'm getting the things I've never done well REALLY PERFECT!  I'm so proud!   My turkey is taking a brine bath tonight and will be ready in the morning when Guy gets home with the foil I forgot to buy.  He was working late today and decided to wait until morning to come home.  That was great with me so I could just have pizza leftover from the freezer for dinner (it was yummy East Chicago pizza).  It's all good, and I'm really excited about putting together my lovely meal tomorrow:  Turkey, Sausage Dressing w/apples and veggies, Bacon Brussel Sprouts simmered in chicken broth, Roasted Garlic Mashed Potatoes (roasted garlic today), Homemade Cranberry/Orange sauce, and beautiful Pumpkin Pie with killer crust!!!  I just love food and I do love to cook.  Thanksgiving is a wonderful holiday!!!  I hope you all have a great one!  xoxoxo Cj

your meal sounded very good, sampled so much cooking i wasn\'t really hungery when it came time to eat..did make dallas a killer oreo pie though
