Today, I roasted tomatoes and froze 6 quarts (paste tomatoes, halved and seeded). After 2 hours at 250 degrees, they are sweet and wonderful without the wetness of freshly cut. I will be happy to have them all winter long and plan to do more since I still have 7 cases of canned tomatoes from last year...Next on the agenda are roasted peppers. My sistour is supposed to send a recipe to preserve them, but if she doesn't come through (likely to be the case), I'll roast, peel, and freeze peppers UNLESS SOMEONE CAN GIVE ME A BETTER IDEA! I am inundated with peppers (thank you Goddess--we'll have "fresh" veggies all winter long)!

You are reminding me I need to get started. Try dehydrating the peppers. Then you can add them to soups and stews and they plump right up.
