Thanksgiving

So much to be thankful for this year.  For the last three years I have made a conscious effort to get my financial house in order and this year it came to fruition - I am 100% out of debt... totally debt free.  I never thought I would ever say that in my life.
I live comfortably yet not extravagantly, I've managed to separate my needs from my wants and life has become quite enjoyable.
For the first time in three years I made a purchase of something I wanted... I truly didn't need it but I wanted it.  An electric fireplace... well actually its an electric stove... with burning logs and flames in the back, it's so relaxing and spiritually hypnotic for me.  I love it.  And as I look at it burning right now, I know that I won't have any regrets with getting it because my finances are in order.
Anyway - Thanksgiving.  For the last three years I have spent this holiday alone and it really doesn't get me down.  I have enjoyed making myself a feast and just pigging out all day and not worrying about manners.  LOL
Well this year, work has been crazy busy.  Been working anywhere from 45 to 55 hours a week and last week, I decided that all I wanted to do was relax on my day off.  So my plan was to get a ribeye steak and a potato to bake and make a salad and lay around watching football.
It was a good plan until I went to the grocery store and saw an eight pound turkey.  So this thanksgiving I'll be making myself a feast again.
Turkey will be the main meat
Sides will be candied yams, mashed potatoes, baked beans, corn, and gravy.
Salads will be cole slaw, hawaiian coconut salad, fresh veggies, green and black olives, pickles, fresh fruits, and cheeses
And deserts will be cherry cheesecake, pecan pie and pumpkin pie.

Yup, I like to cook and at first I wasn't planning on it... what sold me on it though was the knowledge that I have the next four days off... to lay around, eat and rest... and for that I am very thankful...

Congrats on getting out of debt!! I can\'t wait to get to that place :-) your foods sound delicious!!!
