Nothing too exciting going on today. Almost caught up on dishes and made a yummy supper. I am actually forward to leftovers tomorrow. :)
I made garlic mashed potatoes (using coconut milk and non-dairy butter) and added pesto herb seasoning as well....so good! Mixed up a salad as well...and had a couple slices of turkey breast (Pillars). Was pretty good and you'd never know the potatoes didn't have dairy.
Ebby decided to gift me with a lovely furball on the rug. Blech. What I don't understand is why when most of my floor is laminate and vinyl tile stuff she always picks the rug to upchuck on. And then when I clean it up she isn't happy and digs at the rug. She's one strange girl I tell ya.
Anyway, I'm beat so I'm going to skip right along to my gratitude portion of my journal.

I never thought of using coconut milk for mashed potatoes. What a great idea!

yup coconut milk has made the transition to no dairy so much easier for me... we did mashed potatoes at my parents house with a small amount of coconut milk and my dad couldn\'t even tell the difference! I was more generous with mine last night and I still couldn\'t tell. I find coconut milk is a really great alternative for dairy milk in at least 95% of things I\'ve tried it with. :)
