Made twice baked potatoes.
i did not read the instructions on how hot oven should be while bakjng potatoes until later in process. I thought it said 1hr @400 degrees. Pulled these big baker tators out and tried insterting a pointy thin pearing knife but they were not done. Back in over half hour they got cooked perfectly.
I ran out to pick up crate for free so lkcked doggie door with girls outside. Came home cut ghe potatoes in half long ways and scooped out the perectly cooked flesh-there were couple spots in couple tators so doggies got to eat those.
then I needed bacon 8 slices. Had thick cut bacon in fridge with ten slices so two for breakfast w eggs tomorrow. I microwaved it on two microwave safe corelle plates covered with two paper towels on bottom teo on top. The micro gave me bacon setting with 2:30 mins it took two runs thru for both plates to get them crispy enough to break up. Again did not read the directions right. I put the pieces into the potato mash along with all the shredded cheddar from 7oz block of cheddar. Then read I needed half the cheese to go on top after filling the pitatoes. So pulled basically 1/2 out. Added the green onions and last nights left over 1/2 shallot to mix in big bowl. Left the bacon in the mix because had not read directions right to see the bacon was to go on top with the cheese snd green onions after filled. Used heavy cream where directions said milk. No mklk but heavy cream did trick. Butter salt pepper and sour cream from 14 oz squeeze container. I needed 1 cup guess I got there. Little left in squeeze container for another day use.
whipped mixture with my beater till smooth per directions and preheated oven to the temp it said to colk potatoes hour at 350 first off bat. Filled potato skins and put the cheese I pulled from bowl on top stuck in oven only to realize had not put the other half of green onions on top of the cheese. Pulled out added put back jn oven fifteen minutes and this is what came out of oven. Ate one full potato 2 halves!
The blue container was free porch pick up tonight as potatoes cooled.

check out that smoke ring. It tasted really good. I smothered it with Maulls BBQ sauce which is Local to St. Louis and one of the best I ever had.....
