
Went shopping Saturday and spent $136. Got lots of meat and some other stuff.
Yesterday was my day off, so I made dinner and did a bit of food prep.
For dinner we had gumbo and grits (it's in my cookbook, whenever I manage to get the damned thing published) with garlic toast. It was a delicacy.
I also chopped and froze most of the bananas I got so I can make nice cream at some point. I made some tamogoyaki style eggwhite omelettes that I cut into portions. A big square electric skillet is great for that btw.
Let's see...oh I got some little turkey sausages for breakfast. Chicken I plan on making into chicken curry tomorrow, like butter chicken. Man I can't wait! Tonight is pork schnitzels. Probably just making sandwiches out of those.
For lunch today I'm having broiled salmon, the tamogoyaki, asparagus, greens, and applesauce for dessert.
Oh I also made chicken salad yesterday. I make mine with shredded chicken from my instapot, Hellmann's mayo, fat free sour cream, sweet pickle relish, white onion, celery, and cucumber. Plus of course it was seasoned when I cooked the chicken. Used same for gumbo and leftover chicken is for curry tomorrow. So I did three different foods starting with one pot.

I don't eat meat anymore but I will eat fish so that makes me a pescatarian...
I have been picking things from my garden so salads are becoming a daily affair. Tomorrow will be more of the same.
My diet is extremely limited these days, due to a chronic illness. Prior to getting sick, my diet was similar to Bob's -- lots of fruits, veggies, and fish, and very little meat.
Bill, root beer is a great marinade for pork roast.
Ladybug, what kind of illness? Is it Lupus? I have had some experience with that and some training in dietetics. Maybe I can help?
Everyone else, good job on eating healthy and getting in the kitchen :)
Also, due to chronic illness, my diet has become fairly bland. I tend to stick to foods that I know I tolerate well and that I know are healthy.
I guess I've gotten into a rut, and haven't been trying lots of new things.
I have a crock pot though and haven't experimented with it...maybe it's time to try new things.
I dont always eat healthy, I have an illness that prevent sme form eatig meat, ruffage and most raw veggies, thanl God I can eat fruit and fish. Tonight I am making rsaviole and sausage, I can't eat the suasge so will just eat some raviole, I like the mimi ones
